Autumn Calling Soup


October is such a great month, I know I have said this before but it really is. Not only is there the changing of the leaves, my birthday, Halloween but it’s the perfect time to eat the squashes and pumpkins that come straight from the garden. I unfortunately do not have a garden because my backyard is a) too small b) gets little to no sunlight because of the trees c) my dogs would tear it apart!! So I rely on the wonderful farmers market on River Street. Its not huge but it fits the needs of us Moose Javians very nicely by supplying us with a great assortment of veggies and some fruit. 
The last time I was there (picking out the pumpkin and butternut squash for this soup) it was there final get together because here in Saskatchewan it gets pretty cold in October. This news makes me so sad, because I now have to go back to eating grocery store cucumbers and tomatoes, which just are SO NOT the same. Oh the hurdles I have to face on a day to day basis. *cue in the song Don’t Cry For Me Argentina* its really a horrible day for my taste buds to have to eat the grocery store knock offs, they do not taste anything like the real thing!
But I digress. Back to this amazing soup. It is so earthy, creamy, rich and warm that it just gets down to your bones and makes you feel all good inside. Soup is truly the ultimate way to ward off the winter time chills, because not only does it warm your hands by holding the bowl, but your face, mouth and your tummy. Plus if you are like me it really fills you up because you end up eating half of the pot in one sitting (its that good!!!)

Autumn Calling Soup
1 small pumpkin – I used a sugar Pie pumpkin, if they are out of season you could use a can of pumpkin puree too.
1 butternut squash
2 tbsp coconut oil, melted
7 stalks of celery, diced
3 carrots, diced
1 yellow onion, diced
1 clove garlic, diced
6 cups of water (you can add some vegetable broth if desired)
1 can coconut milk
1 tbsp cumin
1 tbsp coriander
1 tsp cayenne pepper
Salt pepper to taste

Pre heat oven 450 degrees.
Split the pumpkin and squash in half and de-seed each. Using the melted coconut oil brush on the insides of the squash/pumpkin halves. Place face down on a cookie sheet and bake in the oven for 25 mins, or until fork tender.
While those are in the oven, dice up your veggies and in a large soup pot fry them in the left over coconut oil on medium/high heat for 15 mins.
Pour in coconut milk and spices and cook for 5 mins, letting the flavours all meld together.
Remove the squash/pumpkin from the oven and using a knife, cut away the skin. Be careful these will be hot!!! You could wait until they cooled but I am impatient so I just used a oven mitt.
Throw the squash/pumpkin and the water into the pot and stir in. cooking for another 5 mins, again letting the flavours all meld together.
Finally blend the soup in a high speed blender until smooth! Serve with roasted pumpkin seeds on top and enjoy!

Mini Vegan Lasagna's

I love my husband! I seriously bagged one of the good ones and I say a little prayer every day that I have him in my life. Not only does he love me for who I am, he also understands me and accepts me for the way I live my life. And I couldn’t be more grateful for that because it is truly one of the hardest things in life to find.
One of the most recent examples of his awesomeness is on Sunday the Riders were playing and we were going over to our friends house to watch the game. Devon had gone golfing in the morning and I had gone to get groceries for the week. While I was there I called him and asked if he wanted any game time snacks, and usually its just chips of some sort or a drink. However this time he asked if I would pick him up dry ribs….dun dun dunnn. As the main grocery-getter in the family and a vegan he knows that I do not pick up meat or eggs unless asked, I might get cheese for him but that’s where I draw the line. Most of the times he come with me to pick out what he wants for meat products (which is rare), so I don’t have too.
So I reluctantly say yes and go to the death (meat) section to find them and get out ASAP. Well with my luck they are no where to be found and I am caught in the viscous cycle of wandering around trying to find them. With no one around to help me, I start to have an slight anxiety attack and got that feeling of just wanting to get the hell out of the section. So I grabbed chicken wings instead and literally run to the living (produce) section.
When I got home one of the first things I said was “Please understand how difficult it was for me to pick these up…” then I started to cry my eyes out (I'm a crier!!)  Instead of him asking why I was crying or telling me to stop, he just pulled me in for a hug and said “I will never ask you to get those again, I can pick them next time” THIS IS WHY I LOVE THIS MAN! He is understanding and loves me! So thank you to the powers that be for bringing him into my life.
So in light of this event I thought it was time for something amazingly vegan, and one of Devon’s favourite meals. Mini Vegan Lasagnas! Every time I make my vegan lasagna he so kindly reminds me that it is amazing and that it can hold up to any meaty lasagna out there. Another great reason why I love him, he knows how to compliment a lady!
I have been meaning to make these for about two months now but I just haven’t been inspired to do so, until this weekend. They are cute individual sized lasagnas that are cooked in a muffin tin and enjoyed by all! I'm not too sure what was drawing me to make these but they seemed so much fun to make and it was a fun twist on a traditional meal. Plus I wanted to see how the quinoa tasted instead of using regular lasagna noodles.
I was a little wary because I wasn’t sure if they would hold their shape after they were removed from the tin, and that was one of the reasons why I liked them. They were mini lasagnas! Basically anything mini is so much better! And as you can see by the pictures they came out beautifully and tasted amazing!
I truly and utterly feel that the reason why these taste so great is because of the cashew cheese. If you plan on altering my recipe please do not omit the cashew cheese, trust me when I say that it is worth the extra step!
Mini Vegan Lasagna’s
2 cups quinoa, cooked
1 jar of vegan pasta sauce
2 medium zucchini, sliced thinly lengthwise, for 12 servings you will need 24 slices
1 tbsp of coconut oil
½ of medium onion, diced
1 cups of mushrooms, diced
2 red bell pepper, diced
4 cups of fresh spinach
2 cups of Daiya Cheese, mozzarella flavour (optional).
Cashew Cheese
1 cup of cashews, soaked overnight
1/2 cup of fresh basil
¼ cup of fresh lemon juice
2 cloves of garlic
1 tbsp of nutritional yeast
¼ cup of water or vegan broth
Place all of the ingredients into a blender or a food processor and blend until smooth.
**While you are cutting up and cooking your veggies and making the cashew cheese, place the sliced zucchini on a baking sheet and put in the oven on the lowest temperature. That way you can cook off some of the excess water that they contain. I happened to do a load of dishes while cooking these so I would say I left them in for about 25 mins and they turned out perfect. If you don’t have time for this step, don’t worry because the quinoa will absorb some of the moisture too!
Sauté all of the veggie in a large frying pan until fork tender. Grease the muffin tins with some coconut oil so they are easier to remove. Then layer each muffin tin like so:
1)    2 zucchini slices
2)    1 large tbsp of Quinoa
3)    1 large tbsp of veggies
4)    1 large tbsp of sauce
5)    1 large tbsp of cashew cheese
6)    Optional - top with some Daiya
Take the ends of the zucchini and fold over until completely covered. I used some cashew cheese to secure the ends down if they kept popping up. Heat up the remainder of the pasta sauce and put aside.
Bake in the oven at 375 degrees for 45 mins and serve with the left over sauce! Enjoy!

Fresh Rolls with Low Fat Lime Peanut Sauce


I am on that mission again! Trying to find another sauce that holds up to my fresh rolls original peanut hoisen sauce. I swear it is my lot in life to try as many dipping sauces as I can, yes I am that addicted. And this new Lime Peanut sauce is pretty damn good, if I do say so myself. I am really satisfied with the results, especially since its low fat!
As usual I was craving fresh rolls for lunch while at work and I was thinking of that sweet and salty sauce that accompanies them. Which got my brain thinking about how I can adjust my original sauce to make it low fat. Cue in zucchini and you got your self a Low Fat Party! Zucchini is really the best kept secret in the cooking world. It can be used in so many ways its ridiculous.

Low Fat Lime Peanut Sauce
1 zucchini peeled
1 tbsp peanut butter
1 lime juiced
1 handful cilantro
½ clove garlic
Salt to taste

Puree in a high speed blender until smooth and serve with your favorite fresh rolls. My recipe can be found here!

Fresh Spring Rolls with Raw Vegan Coconut Mango Sauce

Ever since the first day of making homemade fresh spring rolls, I have been hooked! I could probably eat them every single day (I actually had them for lunch 2 weeks in a row) but I try to limit them because of the high fat peanut dip. Peanuts also don’t really agree with my stomach so I have been on the look out for a substitute that holds up to my original dipping sauce.
I have tried numerous different dips such as, sweet chili, hoisen, sweet potato, but none can compare to my peanut sauce, it is just that good.

Well on the way home from lunch one day I literally had a light bulb go off in my head! Cashews and mango! Why not pair them together in a dipping sauce for my spring rolls? The cashews will give them that nutty, salty flavor and the mangos will give it that sweet, fresh taste. My mind was set on making this when I got home for lunch, I just had to try it out and see how it held up to what I had imagined. 

So I got home threw some things in a blender and viola- a beautiful sauce has been born! 
To make it even better, I found this awesome spice at The Bulk Barn here in Moose Jaw called Coconut Thai and added it to the sauce. It complimented the flavors so well by adding a little heat and another element of sweetness. If you dont have that spice I offered some substitutions at the bottom. It might not taste the exact same as the original but it still tastes great!

Ingredients 
½ cup soaked, raw cashews
1 tbsp coconut Thai spice
1 fresh mango
1 lime, juiced
1 green onion
½ clove garlic

Or

½ cup soaked, raw cashews
1 cup frozen mango
3/4 cup raw coconut water
1 tbsp fresh cilantro 
1 tsp fresh grated ginger
1 tsp red pepper flakes
1 green onion
½ clove garlic
1 lime, juiced
½ lemon rind

Vegan Pizza Pops and Vegan Pesto Pizza

I wonder if you are getting tired of my pizza posts? I am certainly not tired of making the pizza and eating it, hence all of the recipes I have posted!
This time I made a homemade pizza pocket, or a calzone, depending on how you want to see it. AND I made a mini pesto pizza. Two for one today folks!

When you really think about it, you can do a lot with pizza dough, and by simply changing up the toppings, shape or size of what you are making, it changes the whole meal. Especially when it come to kids. What kid wouldn’t love decorating his own pizza with the toppings they love, maybe even making it have a face. Its simple changes to the meals you and your family love that make the difference between the same old, same old into something new and delicious.

For those of you who read my Homemade Pizza post, this is the same dough recipe.

Pizza Dough – 2 Pizza Pockets and 2 mini Pizzas
1 ½ cup whole wheat flour
2 tbsp ground flax
2 ¼ tsp quick-rising yeast
½ tsp salt
2/3 cup very warm water
2 tsp olive oil
2 tsp. date honey *recipe below


In a medium bowl, combine flour, flax, yeast and salt. Mix well.
Measure warm water in measuring cup, then stir in olive oil and honey. 

Pour mix over dry ingredients and mix using wooden spoon to form a ball. 
Turn dough onto a lightly floured surface. Knead for 2 mins. 
Grease inside of another bowl with olive oil and place dough inside. 
Cover with plastic wrap. Let rise in warm place until double in size (about 20mins).
Divide the dough between the number of pizza pockets or mini pizzas you would like (max 4)
Roll out dough over lightly floured surface into a circle. 
Put on toppings and bake at 425 for 15-20 mins.
**While the dough is rising I cut up the vegetables to have ready.

For the toppings I used:
1/3 sm can tomato sauce
½ red pepper, diced
3 mushrooms, sliced
½  zucchini, sliced
½ cup shredded Daiya mozzarella 

Date Honey - makes ½ cup

5 dates
¼ cup water
Blend in high speed blender until smooth, store the rest in the fridge.
 

Mini Pesto Pizza

Pesto Sauce
½ cup of cashews or sunflower seeds, soaked for at least 4 hours

1 lemon, juiced
1 clove garlic
1 large handful of spinach
5 sprigs of basil, de stemmed

Lightly chop up the spinach and basil, and throw all of the ingredients into a high speed blender. Set on medium high and blend until smooth.

Toppings
3 mushrooms, sliced
½ zucchini, sliced
Top with fresh spinach

Vegan Meatless Balls, Gluten Free


You gotta love living in Saskatchewan! All of this snow, that I feel will never melt, does not represent Spring at all. So with all of this snow and cold weather, I am still craving hot comforting meals instead of the fresh, cold, spring salads that would be typical for April.
I won’t lie though, I am happy that it is still winter for one reason and one reason only, Lucy is not covered in mud. With Spring, comes melting snow and muddy backyards, two things that do not go well when you have a long haired, large dog. So in a small way I love the snow and my clean dog and house, but truthfully I would love to put my winter jacket away and not have to worry about breaking my ankle on the ice.

This recipe came about on Saturday afternoon while watching the documentary Fat, Sick and Nearly Dead.  It’s about a guy named Joe who wants to transform his life from fat, sick and nearly dead into fit, happy and healthy. He was 310 pounds and wanted to make a big change in his life, so he did a juice cleanse for 60 days to see what would happen. I won’t tell you anymore but you can guess that it turns out great. I really really really suggest you watch this with your WHOLE family. Yes even your kids. Joe lays out the movie in a way that anyone can grasp, including little cartoons explaining your immune system.

So anyways we are sitting there and I start to crave a smoothie so bad, I mean the guy is drinking freshly squeezed juice and it looks so good! Well, great minds think alike because Devon says “I'm craving a smoothie” Boom, I hop in the kitchen to whip us up a delicious snack and a commercial for Diners, Drive Ins and Dives comes on with a clip of spaghetti and meatballs.
Devon – ‘Now I want a smoothie and spaghetti and meatballs.’
Me – ‘Okay, let’s have them for supper, but could we just try making vegan ones?’
Devon – “Ya sure let’s give them a shot!’

So Devon searched the internet for a recipe and came across this one on My Vegan Cookbook and I had to agree it looked good. Now knowing me I don’t follow recipes, so I got the gist of it and went my own way. I didn’t make a ton of crazy changes but the main thing I changed was making them Gluten Free. Chelsea was coming over for supper that night and it would be good if she could actually eat the food we made.

If you have any leftover rice this is a really good recipe to try, because you want the rice to be a little dry and really who likes eating left over plain rice? The lentils you can either buy canned or you can use dry lentils and boil them on the stove for 45 mins to an hour. I would also suggest using fresh parsley rather than dry, because these are only cooked for 20 mins you still get the freshness of the herb after they are cooked.
 
These do get quite messy when you are rolling them, but hey no big deal because there is no raw meat or eggs in them, so just lick your fingers and see how it tastes. That is probably the biggest benefit about making vegan meatballs, is that while you are stirring in the ingredients you can taste test all the way through. Again there are no worries about eating raw meat or eggs, its already cooked rice and lentils with some herbs and spices!

I am honestly really happy with this meal, probably one of my favourite things I have ever made. We made it with zucchini noodles and an organic pasta sauce, two simple ingredients that don’t cost that much! The next time you are buying tomato sauce, read the label to see if there is any added sugar. That is one of the main reason I buy organic, is because there is no sugar added to the sauce, and I can pronounce all of the ingredients. I have copied the lists of ingredients from Prego and the Presidents Choice Organics Primavera Sauce so you can see the difference in what they put in.

PREGO TOMATO PUREE (WATER, TOMATO PASTE), DICED TOMATOES IN TOMATO JUICE, SUGAR, CANOLA OIL, SALT, DEHYDRATED ONIONS, SPICE, DEHYDRATED GARLIC, CITRIC ACID, NATURAL FLAVORING.

Presidents Choice Primavera: Water, tomato paste*, diced tomato*, carrots*, celery*, zucchini*, red peppers*, extra virgin olive oil, sea salt, green bell peppers*, minced onions*, garlic, parsley*, oregano*, black pepper*
* = organic

This is something we can simply change in our grocery carts that is one step towards making healthier decisions.  Plus I hate it when labels say ‘Natural Flavourings’ What the heck is that? If you are vegan, gluten free or have any allergies you have to be wary of this because fish, gluten and nuts are all natural. So if you are concerned call the company and ask to make sure you can eat it.

Ingredients – 10 Large Meatless Balls
1 ¼ cup of cooked rice, white or brown
½ cup of cooked lentils (do not use kidney beans or black beans)
5 mushrooms, minced
2 tbsp of parsley, minced
1 lemon, juiced
½ cup ground flax
¼ cup brown rice flour
½ garlic clove, minced
2 tbsp of soy sauce
2 tbsp of olive oil
1 tsp balsamic vinegar
1 tsp of chili powder
Dash of red pepper flakes
Dash of liquid smoke (optional)

1 jar of your favourite tomato sauce
1 zucchini per person, thinly sliced using a mandolin or a vegetable peeler

Combine all ingredients together and mix until well blended. If you find it too wet, add more ground flax, if too dry add some water.
Roll into balls, place on a lightly greased cookie sheet and bake at 350 degrees for 15 mins. Add tomato sauce into a frying pan and heat up. Add the meatless balls and simmer for 5-10 mins, letting them soak up the juices. Serve over a bed of zucchini noodles!

Lemon Dill Tomato Sauce with Zucchini Noodles

After that life changing curry dish (well, for me it was) I was thinking that the curry sauce is something that could be made to taste like anything. You could omit the curry and add something totally different, and BAM you got yourself a whole new sauce. So what did I want? Sweet, savory, spicy? I wasn’t sure. That was until I was walking through Safeway and for some reason the flavor of dill popped into my head. Mmm dill… that sounds delicious, I haven’t had anything with dill for a very long time and it is one of my favourite spices. Now what? Dill and… dill and… dill and…lemon! So simple yet so perfect. Lemon dill tomato sauce, with zucchini noodles sounds like an awesome supper.

When I got home from Safeway (after scoring 5 bunches of bananas for $4.50, woo hoo!) I started on my dish and boy did it smell good. I don’t know what it is about dill that just screams awesomeness but it does. Like the curry sauce it has a rich, creamy flavor that some people might be surprised to learn that there is no milk or cream involved. That is one of the benefits of blending your sauces, they come out smooth and creamy without the added fat! I also decided to serve this with some steamed broccoli to add some color, body and extra nutrients to the dish. I could have totally eaten the sauce by itself, its that good, but its nice to have texture and color in my meals, and what a better steamed veggie than broccoli! I hope you enjoy this meal as much as I did!

This is what the sauce looks like before you blend it!
Ingredients 2-4 Servings
1 tbsp coconut oil
1 large yellow onion, diced
1 clove garlic, sliced
1 large can of whole tomatoes, chopped in half
½ cup cashews, soaked overnight
1 lemon, juiced
5-7 sprigs of dill, de-stemmed and chopped
Pepper to taste
1 head of broccoli, chopped

In a large frying pan on medium/high heat sauté onions in oil for 10 mins until brown. Add the rest of ingredients and simmer for 15-20 mins. Pour into high speed blender and puree until smooth. While this is cooking, steam broccoli until fork tender.

Zucchini Noodles
1 zucchini per person

Using the julienne blade of a mandolin, slice zucchini lengthwise into long, thin strands. Slice the zucchini just until you reach the seeds in the middle and then stop (the seeds will cause the noodles to fall apart).
NOTE: If you don't have a mandolin you can use a vegetable peeler or a knife.  

If you want the noodles to be hot, put the noodles into the frying pan with desired amount of sauce and cook for 5 mins and serve with broccoli! Enjoy!

Vegan Cashew Curry Sitr Fry

You know those days where you eat at like 3:30 in the afternoon and when supper comes along you don’t feel hungry but you still feel like you should eat something? That is what happened the night I made this. It was 8:00 and I was searching the kitchen for something to eat and was coming up with nothing. Not that we didn’t have any food in the house, I just was being indecisive about what I wanted. So I walked back into the living room and started to watch You Gotta Eat Here and what came on has changed my life forever!

It was a recipe for Cashew Curry sauce that was vegan! Holy Moly it looked amazing and really easy to make. I was super intrigued and it even caught the eye of Devon, the curry hater. So now I was torn, because it was 8:20 and kind of late to be making supper but I really, really, really wanted to make this… sooo I did! We decided to serve it over rice, and we were kind of pumped because we found white rice in the cupboard, something we haven’t had in a long time.



The whole meal only took around 35 minutes to make and it was well worth it. My thoughts of eating so late were silenced by the amazing flavours this supper had. I think I said “I love this” about 8 times while eating it, and now as I type this I am thinking about making it again for supper tonight. The sauce is creamy, thick, FULL of rich flavor and its not that high in fat which is a HUGE bonus. Aside from the oil there is only the cashews in the sauce which add fat, there is no milk or cream, the usual culprits in fatty sauces.

The only changes I made to the sauce from the show was that I reduced the cashews from one cup to ½, I didn’t put in cinnamon and nutmeg, and she used 2 large onions and no spinach. As I was making it I thought that 2 onions was a bit much, so what would be a good substitute for it? I didn’t want to add more cashews and I didn’t want to add something that would drastically change the flavor of the dish. That’s why spinach works so well, it adds great color, nutrients and body to the sauce without having to sacrifice any flavour or add any extra fat. It’s really a win, win here!

If you are a curry fan or are someone who is interested in trying it, I would say you NEED to try this! It wont disappoint you or your family and friends. Enjoy!  

Ingredients: 2 - 4 people

Cashew Curry Sauce
1 tbsp coconut oil
1 large yellow onion
½ cup of cashews, soaked overnight or for at least 4 hours
1 sm can of tomato paste
1 ½ cups of water
2 cups fresh spinach
2 tbsp curry powder
2 tsp cumin
2 tsp coriander
Red pepper flakes to taste

Heat up large frying pan, add oil. Sauté onions until they are golden brown, about 15 minutes on med heat. In a bowl whisk together the tomato paste and water until well blended, add to frying pan and stir in. Add in all spices, spinach and cashews cook for 10 minutes. Pour into a high speed blender and blend until smooth.

Stir Fry Vegetables and Rice
1 cup of rice
2 cups of water

2 tsp of oil
1 head broccoli
½ head cauliflower
4 stalks celery
½ sm. container white mushrooms
1 clove garlic, minced
½ cup water

While the onions are cooking, I chopped up all of my vegetable and cooked my rice. Sauté the vegetables and garlic until fork tender, about 10 minutes. You could have these cooking in a separate frying pan while the cashew sauce is cooking, to save on time.

Add sauce to the vegetables in the frying pan, and stir in. I try not to waste anything, so after I am done pouring the sauce out, I take ½ cup of water and add it back into the blender, turn it on high to get all the sauce off the sides and pour it back into the pan. Just to make sure its all in!

Serve over rice, quinoa or noodles! Enjoy!
