Ultimate Spicy Vegan Mac n' Cheese


Sunday was Devon’s (my hubby) birthday! He was away on a stag so we didn’t get to really celebrate, so we decided to do something on Monday night instead! I asked him what he wanted for supper and he wasn’t really that enthused about deciding, so I just let him mull it over for the morning. On lunch I was talking to him on the phone and saw a recipe for Mac and Cheese... well that’s a great idea!

He was down for the idea of an ultimate mac n’ cheese and I was up for the challenge. The challenge of making him something that I am unable to taste and also the challenge of making an ultimate vegan version! I can’t vouch for his version but he said it was awesome (he did go back for seconds!) but I can tell you that mine was the ULTAMITE VEGAN DISH EVER! I am pretty sure I yelled I LOVE THIS about ten times throughout the meal.
What I really love about this dish is that it is half of the calories and fat of what my husband’s was!!  Why yes I did say half! Can you believe that this whole dish is only around 700 calories and 15g of fat? As opposed to 1500 calories and 75g of fat, that Devon’s dish contained. So when you break it down and share this with someone (well, maybe share) your portion is only 450 calories and 7g of fat. I really hope you were sitting down for that one! It was a huge shocker to me too.

What is the secret you ask? Well I guess I can share that timbit of information with you, seeing as I really want you to try this....it’s a sweet potato! Crazy as it sounds it is a really great addition to this tradition dish. It has a creamy texture, rich taste, and a bright orange color that really adds a fun twist. Also substituting out the pasta for zucchini noodles definitely helps in reducing in unnecessary calories plus zucchini is much easier for your body to digest!
The dish really came together, especially with its kick of spice right at the end that literally had me going back for more (I had thirds, I won’t lie).  If you are not a huge fan of spicy food then just cut back on the jalapeno and Franks, or omit the Franks all together. 


Ultimate Spicy Vegan Mac n' Cheese
Severs 2 people (or one person if you are like me and eat the whole thing in one sitting!)

1 large sweet potato
½ cup rice milk
¼ cup nutritional yeast
½ cup Mozzarella Daiya
½ jalapeno, diced
½ tsp garlic salt
1 tbsp Franks Buffalo Sauce
1 medium zucchini

-Bake the sweet potato in the oven at 400 degrees until fork tender (around 45 mins).
-Peel the skin off the potato and dice into chunks (watch out its fricken hot!) and place into a medium bowl, add milk and mash until smooth.
-Stir in nutritional yeast, jalapeno, Franks Buffalo Sauce and Daiya until well combined.
-Using a vegetable mandolin, vegetable peeler or spiralizer make zucchini noodles.
-In a casserole dish combine the cheesy sauce and noodles, top with nutritional yeast and a little more Daiya!
-Bake in the oven at 400 degrees for 15 minutes.
-Serve and devour!

Quick and Easy Curry Stew

I LOVE CURRY! Like L.O.V.E LOVE  I have made a couple different curry dishes and this is by far the easiest and best I have ever made. I know I have said this about every curry dish I have made, but honestly it just keeps getting better and easier. I was surprised at how quick this meal came together and how great it turned out. 
Like always, when trying a new dish I am always a little wary on if I will like it, but man this is good. Now, I can see a couple of you out there thinking that this might be too hard, you are wrong, it’s only 4 easy steps to awesomeness for this dish. If you are unsure of whether or not you like curry then maybe start off with no curry spices and add little by little instead. For me I used 2 tbsp of curry spice to really bring out that extra punch.

So if you are in the mood for something really fun tonight, why not try out my amaze-balls curry stew, I dare you!

Serves 2-6 people ( I ate the whole pot so really 1-6 people)


Stew
2 garlic cloves
1 tbsp of coconut oil
2 good-sized sweet potatoes, peeled and chopped
1 large yellow onion, chopped
1 large red bell pepper, or 2 small ones, chopped
1 can chick peas, rinsed and drained
1 lime

Sauce
1 can diced tomatoes
2 inch fresh ginger, peeled
2 heaping tablespoons peanut butter
1 tsp ground cumin
½ tsp ground cinnamon
¼ tsp ground red pepper flakes
2 tablespoon curry powder
1 tbsp maple syrup
½ can coconut milk

Directions:
Step one – chop up all the veggies
Step two – sauté the veggies, hick peas and oil for about 10 mins in a large pot on medium high, until almost fork tender
Step three – put all of the sauce ingredients into a blender and puree until smooth
Step four – pour sauce over veggies and let simmer for 15 minutes, the longer you simmer the thicker it gets!
Garnish with lime and serve over rice or noodles. Enjoy!


Substitutions
*coconut milk for any that you have on hand
*peanut butter for any other nut or seed butter you have
*sweet potatoes for regular potatoes

Day Two of Juice Cleanse - Pear and Sweet Potato Juices!


*** Update on Day One***
Last night I started to get ready for bed at 8:30, my stomach started to rumble so that’s when I knew that it was time to go to sleep and I was in bed around 9:00.. The truth about hunger pains at night is that you aren’t actually hungry, you are tired. So next time you think you want that popcorn at 9:00 at night, grab for your toothbrush instead and go to bed early!

I unfortunately tossed and turned for about an hour, partially because my stomach hurt and partially because I am not used to going to bed that early. If I would have actually gone to bed at 8:30 I don’t think I would have had that bad of stomach pain because I would be asleep. So to remedy the pain I drank some water which really helped!

Day Two!
This day was a lot easier that I imagined! I had such a terrible time with day two of my mono fruit cleanse that I thought it was going to be the same experience and to my surprise it wasn't. I had energy, I was alert, my skin feels a lot smoother and not once did I think that I was going to die. As of right now I don't think I would do another mono fruit cleanse again, I think I will stick with the juicing instead! 

So, I woke up this morning like any other morning… hitting snooze on my three alarms 2 times each and finally getting up at 5:30am (Devon really loves that, especially since two of my alarms are the Harry Potter theme song). I got up and felt really good except I really, really had to pee. I took my liter of water to work along with my Contigo mug full of hot water and lemon. I feel that the lemon water really helps calm my stomach in the morning since I am used to eating fruit at work. And since its kept cold in there it helps me warm up :)

For breakfast I made 1 liter the most delicious juice, I call it Pear-ific and so far its my favourite one!  


For lunch I did 1.5 liters of orange juice again, but after drinking about a cup I got really bad stomach pains, possibly because I drank it too fast. So I called Ashley and she suggested that I stop drinking it and just drink water until the pain goes away. Thankfully it did, but after the pain went away I tried to drink it again and it still was not agreeing with me, so I guess no Oj for me. But when I got home I was craving something so I opened up a delicious coconut water, which luckily didn't  hurt my stomach. 


As for how I felt this afternoon, other than feeling a little unfocused at work, I felt great. However towards 4:00 I was feeling really tired. When Devon got home he said that I was not looking so good, but I assured him that I was only tired and other than that I felt normal. For supper I made a sweet potato cocktail, that I threw together on a whim. I was a little apprehensive of how it was going to turn out because I have never used a sweet potato before, but I was pleasantly surprised.  


Tonight I also went and did a far-infrared sauna session at the gym I work at (Ladies Workout Express) and one of the perks of working there is I get free sauna's anytime I want. So while talking to Ashley tonight she suggested that I go for a session to help rid my body of toxins, what a brilliant idea Ashley! I went in for 45 mins and at 145 F. and boy did it feel amazing! I was pouring sweat out of my body like a waterfall. Okay, so think of the most you have ever sweated, say after a run, or a basketball game, now dump a bucket of water over your head and thats how soaked I was.... I know really sexy image. While in there I laid down and just tried to relax and shut off my brain. But of course, that didn't work out to well, I have a lot on my mind right now because our Mexico trip is coming up and I still have a lot to do. I even started singing the Chumbawamba song, Drip Drip Drip goes the water... there is a slight chance I have ADD. I feel more relaxed and calm after that and I am now thinking I should do one again tomorrow!

As I type this I realize its 8:40 and I should really start getting ready for bed.  I am trying to drink about 1/2 liter of water (for a total of 3 liters of water today) before I go to bed because of all of the sweating I did and I hope to avoid those stomach pains that I encountered last night. I am crossing my fingers that tomorrow will be as easy as today, but I am not getting my hopes up! I will keep you posted!

My Mama's Cabbage Rolls Veganized!

One of my families’ favourite things to eat growing up was my mom’s cabbage rolls. On our birthdays we would get to pick what meal we would like her to make and I always picked cabbage rolls. I would even get upset if there weren’t any at Christmas or Easter, that’s how good they are. My mother learned from my amazing Grandma Violet (she is Swedish) who is also a great cook, so no wonder they tasted great. I find that your grandparents/parents heritage determined what type of cabbage rolls you grew up with, ours were covered in tomato juice and had a hamburger and rice filling. When I would try other families cabbage rolls often they would taste weird and sometimes even gross. It was hard to measure up to my moms!!
So with the holiday coming up and with a lot of traveling ahead of us I started to think about what my sisters and I were going to eat. We come from a family of farmers so we were certain that the food was not going to be vegan friendly. But no problem there because we are used to taking our own food to parties anyways! I had already decided to take my Quinoa stuffing but I didn’t think that it would be enough because we are really big eaters. That’s when cabbage rolls popped into my head. I haven’t had them in over a year and I really missed them. I wasn’t going to ask my mom to make them, so I ventured into the long process myself hoping and praying that they tasted at least half as good as my moms.


I had bumped into my friend Karen at the grocery store the day I was picking up my groceries and she told me that Whitney from Grounded Nutrition had an amazing vegan recipe and I should look it up. I knew my sister had been talking with her this past year so I asked her if she had the recipe and luckily she did!

I had already formed a plan of attack in my head and when I looked at Whitney’s recipe it was similar to what I was going to do except for one big difference. She layered sweet potatoes in hers! WOW that was a game changer! I was really excited to add those to my recipe because I knew that they would really add some great flavour to the mix!
I couldn’t wait for my sisters and mom to try them, I was really hoping they enjoyed them as much as I did (I got to try them the day before and nearly ate the entire roaster!) Good thing I didn’t because they were all really impressed with my efforts, and they even said that they tasted like my moms! WOO HOO!

After we got home from Christmas all I could think about was how delicious they were so…… I made 3 more batches! I went to Superstore on Boxing Day and got a whole bunch of groceries and 3 tin foil disposable pans and got to work!
The good thing about making 3 batches all at once is that there is only one mess and it doesn’t take that much time (probably 2 hours of work, but I took my time) The weird thing is I forgot at least one ingredient per batch! The first one, had no parsley or oregano, the second one had no parsley, and the third had no garlic. So they are all going to taste slightly different but I am not worried about it!

Vegan Cabbage Rolls – 1 Large Roaster Full
1 large head of cabbage
1.36 liter can of tomato juice,
1 cup of quinoa, uncooked
1 tbsp coconut oil
2 cups of mushrooms, diced finely
2 cups of celery, diced finely
4 green onions, diced finely
3 carrots, diced finely
2 large sweet potatoes, sliced thin
1 clove of garlic, minced
½ cup of fresh parsley, chopped up finely
4 sprigs of fresh oregano, de-stemmed chopped up finely

Cook your quinoa in 2 cups of water in a medium sauce pan for 20 minutes, and chop up your veggies, garlic and herbs. For the cabbage, remove as much of the stem as possible so you are able to peel the leaves off easily. Place cabbage in large sauce pan and fill it half with water, and set to boil. Check the pot every 5-7 min, removing any leaves that are soft and that peel away from the head easily. BUT BE CAREFUL BECAUSE THEY ARE HOT!  I dunk the hot hot leaves in a bowl of cold water to stop the cooking process because I don’t want them to get too soft and mushy. While you are waiting for all of the leaves to fall off I throw the cooked ones in a strainer to drain the excess water. And I then cook the veggies, garlic and herbs and oil in large frying pan until the veggies are almost fully cooked. Stir in quinoa and set aside.
Once all the leaves are cooked, cut off the hard stem at the bottom in the shape of a V. Next take the sliced sweet potatoes and cover the bottom of the roaster, then fill each leaf with a spoonful of filling and roll like a burrito. Place the cabbage rolls on top of the sweet potatoes until the roaster is full. Layer another layer of sweet potatoes and if you have any cabbage left layer that on the very top. Pour the entire can of tomato juice into the roaster and you are done! Cook at 350 degrees for 2.5 hours and serve!

Sweet Potato & Quinoa Chili, Vegan and Gluten Free

As much as I love the summer months here in Saskatchewan, I do really love Fall. The smell of brisk cold air outside, the crunch of leaves and the comforting feeling of eating a hot meal to warm you up. For me nothing says comfort food more than chili and with today being the first snow fall of the season I thought it was time to share my awesome chili recipe. 



I am constantly bragging that my chili is the best. In fact, it is so good that my older sister who is a raw vegan ate 3 large bowls!! She picked around the beans, but absolutely devoured the rest. Good thing I wasn't looking forward to left overs... :) 

When I first started to cut out meat from my diet, hamburger was one of the first things to go, along with all poultry. So when making chili I just used beans and veggies but it just wasn't as satisfying. I missed the hearty feeling that chili had, and with just beans and veggies it felt like a thick soup. Then I discovered Quinoa and found a new main star for my chili. Quinoa gives the meaty texture, its gluten free and seeing as there is 22 grams of protein to 1 cup, this is something that will definitely fill you and your family up.

This recipe is super simple to throw together and if you don't have a couple of ingredients, substitute them out for other things you have in your fridge. The only thing I suggest you try and keep in there are the Sweet Potatoes which add a great chunky texture and of course the Quinoa.


Vegan Chili

1 tbsp of coconut oil
1 onion, diced
1 clove of garlic, minced
3 celery stalks, diced
2 medium sweet potato, diced
1 small zucchini, diced
5 large mushrooms, diced
1 red pepper, diced
1 large can of black beans
1 large can of kidney beans
1 can of beans in tomato sauce
1 can of tomato paste
1 large can of diced tomatoes
2 cups of vegetable stock 
1 cup of uncooked, strained quinoa
1 tbsp of chili powder
1 tbsp of cumin
1 tbsp of coriander
Cilantro for garnish


Heat the oil in a large soup pot over medium low heat. Add onions, garlic, celery and sweet potatoes and sauté for about 10 minutes.  Add the tomato paste, tomatoes, chili powder, corriander and cumin and cook for about 5 minutes, stirring until spices are fully blended in. Add the mushrooms, red pepper, zucchini, beans, stock, and season with salt and pepper. Continue to cook for about 5 minutes, then add the uncooked strained quinoa. Continue cooking for about 30 minutes, stirring frequently, or until quinoa and potatoes are cooked and the chili has thickened. Top with avocado and chopped cilantro.

Sweet Potato Curry Soup


Brr its cold in here!!

 As the temperatures lower, and the leaves get crunchy, there is one thing I come to realize.... its now soup season! And I like to believe that I make a pretty darn good soup, not a soup whisper per say but maybe a soup fanatic. Last fall and winter I am pretty sure I made soup every week, sometimes even twice. I have made everything from an Indian inspired sweet potato/cauliflower soup, traditional harvest vegetable soup, to my all time favourite Peanut Butter Soup (more on this later). The wonder of soup is that you can pretty much put any vegetable combination into a pot, add broth and your favourite spices and VIOLA! You got Soup! So as you can tell, Soup is one of my favourite meals to make. It’s easy to prepare, easy to freeze, and really easy to eat!
Usually my process starts with me being cold and thinking ‘Man I would do anything for a bowl of soup!” So I go home and search my fridge for ingredients that work well together, grab my largest pot and start chopping! Yesterday marked day one of my soup season and boy did it turn out fricken great. As I said before, I was cold at work and thought "Mmmm soup", so I mentally thought of what I had in my fridge and sweet potatoes popped in my head. PERFECT! They are hearty, sweet, colorful, nutritious, and not as starchy as the regular potato. Then I thought, crap I don’t have celery. For me, I can’t make soup without celery. So I raced into Safeway, grabbed a bunch of organic celery and went home to start this soup.


Ingredients
  • 2 medium yellow onions
  • 3 mediums carrots
  • 5 stalks of celery
  • 2 medium sweet potatoes
  • ½ head of Broccoli
  • 1 tbsp of coconut oil
  • 1 cube of dry vegetable broth
  • 3 cups of water
  • ½ cup of uncooked, strained quinoa
  • 1 tsp of curry
  • 1 tsp of coriander
  • 1 tsp of cumin
  • Fresh cilantro
  
My soup starts off like any other vegetable soup... chopped veggies! So I take out onions, carrots, celery, broccoli and the main star – Sweet Potatoes! Chop up all the vegetables into bite size pieces, and place the broccoli aside. Heat up your pot on Medium/High heat, add your oil and sauté the onions, carrots, celery and sweet potatoes for about 10 minutes. Add 2 cups of the water, and continue cooking for another 5 minutes to blend the flavours of the veggies with the water. Reduce heat.
This next step is my secret weapon... my blender!! This is something that will change your soup making days FOREVER!!!! I know it did for me. You take half of the cooked vegetables and broth, throw it in your blender and puree.  While this is blending I add my dry broth and spices to the puree while it’s going.


Next pour the pureed vegetables back into the pot and stir in until well blended. This is when you add the last cup of water, broccoli and quinoa and stir. I like my soup on the chunky side (as you can see in the picture) so I don’t add that much water, but if you like more of a watery consistency, add more water until desired thickness or thinness.  Leave on low heat for another 20 minutes or until broccoli and quinoa are fully cooked. Wait for it to cool off a bit, top with fresh cilantro and ENJOY!!

To quote my wonderful husband tonight, “Wow this is really good” followed by “You could make this every week and I would eat this!” and my favourite “I love how this soup tastes like there is cream or milk in it, but it doesn’t!”
That is the beauty of blending the cooked vegetables to add to your base of your soup. It does make your soup creamy without adding any diary to the mixture. So fewer calories, vegan friendly and less ingredients you need to have on hand. Win-win for everyone!
